Bread Machine French Bread

Dough Ingredients

  • Water – 1 cup + 1/4 cup
  • Salt – 1 tsp
  • Olive Oil – 1 tbsp
  • Sugar – 0-2 tbsp
  • Bread Flour – 3 1/2 cups (420g)
  • Yeast – 2 tsp
  • Cornmeal (optional) – small amount for dusting the pan

Egg Wash

  • Egg white – 1 egg
  • Water – 1 tbsp

Instructions

Dough (15 min) cycle in the bread machine. Put ingredients in the machine as suggested. Put the dough in a covered olive-oiled bowl for 30-60 minutes. Punch down dough, then form loaves (probably two with this recipe). Lightly grease the pan, cover the pan in corn meal (optional, but recommended), then let rise until doubled in size (30-60 minutes). Heat oven to 400 degrees. Apply coat of egg wash before putting in oven. Bake for 20-25 minutes, rotate the pan midway through, and apply another coat of egg wash. After bread is golden brown with a firm crust, remove from oven and cool on rack for 30 minutes or so before slicing. Make that bread! 🍞
